  • 2 cups mung beans

Instructions:

1. Soaking the Mung Beans:

  • Place 2 cups of mung beans in a large bowl.
  • Cover the mung beans with water and let them soak overnight.

2. Grinding the Mung Beans:

  • After soaking overnight, the mung beans will have expanded to about 5 cups.
  • Drain the soaked mung beans and transfer them to a mixer or grinder.
  • Grind the mung beans into a fine paste using the mixer or grinder.

3. Making the Flap Bread:

  • Heat a non-stick skillet or griddle over medium heat.
  • Pour a ladleful of the mung bean paste onto the skillet and spread it out evenly to form a round shape, similar to a pancake or crepe.
  • Cook for a few minutes on each side until golden brown and cooked through.

4. Serving:

  • Once cooked, remove the protein flap bread from the skillet and serve hot.
  • You can enjoy the protein flap bread plain or with your favorite toppings or fillings.

5. Storage:

  • Any leftover protein flap bread can be stored in an airtight container in the refrigerator for a few days. Reheat in a skillet or microwave before serving.
